I can willingly admit (with only a little bit of shame) that Peeps are one of my favorite spring time treats. I just can’t stay away from those sugar coated bunnies and chicks. But, this year I decided to resist temptation by making my own Spring Time Marshmallow Treats!

yum | homemade chocolate-dipped marshmallowsNow, you probably all know about my slight obsession with homemade marshmallows. I love to break my recipes for Candy Cane or Bourbon Brown Sugar for the colder months but today’s variation is perfect for a sweet Spring time treat or as a yummy addition to your Easter baskets.

Homemade Marshmallows:

Ingredients:

  • 4 envelopes unflavored gelatin
  • 2 cups white sugar
  • 1 cup brown sugar
  • 1 1/4 cup light corn syrup
  • 1 1/2 c. water (divided in half)
  • 1/4 tsp. salt
  • 1 tsp. vanilla extract
  • Powdered sugar
  • Semi-sweet and white chocolate
  • Sprinkles

Directions:

  1. Spray a 9×13 pan liberally with non-stick spray, line with parchment paper, then spray again. Don’t skimp on the spray!
  2. Pour 3/4 cup water into mixing bowl and sprinkle in gelatin. Let sit for at least 5 minutes.
  3. Combine sugar, syrup, salt, and the remaining 3/4 cup water into a medium sized pot.
  4. Boil and stir to dissolve sugar. Without stirring any further, heat to 238F (use candy thermometer). When it’s ready, it will start to look bubbly and foamy on top.
  5. Pour done syrup slowly into mixing bowl. Work up to a high mixing speed and continue to beat for about 12 minutes until stiff, fluffy, and white.. I usually like to put a towel over my mixer to contain the steam and any potential splatter while I’m increasing speed.
  6. Add vanilla. Mix 1 more minute.
  7. Spread into prepared pan and let sit for 3 hours uncovered.
  8. When done setting, spread top with powdered sugar and then release onto a clean surface covered in more powdered sugar. Cut into squares with a sharp knife and dip all sides into powdered sugar.
  9. Line a cookie sheet with parchment paper
  10. Melt chocolate and prepare sprinkles in separate bowls.
  11. Carefully dip marshmallows into chocolate, then sprinkles, and place on cookie sheets to dry.

It’s spring time now and that means it’s time to bring on the bright colors! Today, I’m pleased to be sharing my favorite floral trend for 2014 and this month’s Color Pops board inspired by my choice!

Last month, ProFlowers contacted me for my opinion on this year’s best floral trends. I was super excited about it because I love fresh flowers. Even though most plants would run away from me if they could, fresh cut flowers are one of my favorite ways to liven up any room. It’s an instant boost.

Of course, ProFlowers didn’t make it easy to choose with their beautifully crafted inspiration boards, but after a few minutes, I knew which one was my favorite:

I’m seriously in love with everything on this board! Especially that dip-dyed pillow! We actually have a few of those whirly candle holders from CB2 and they are so fun. Plus, they would really come in handy for lighting citronella candles outdoors this spring!

Happy April! Did y’all have any luck with April Fools Day shenanigans yesterday? Sadly, or not so sadly, there were no pranks here.

Today we’re officially closing the books for March with out monthly Goings On + Photo Ops instagram recap! Now, I’m a little short on instagram photos this month, but in an odd turn of events half of the photos I do have are of my face. (Maybe I’ve been listening to that #selfie song too much!)

  6. Decided to take tomorrow off. Lucky to be able to do that.
  7. Leah & Riley’s wedding at Ashton Gardens + the coolest Violin Guy.
  8. Stayed at the Wildwood Inn and spent the day in Denton
  9. Daylight Savings has me totally thrown off but I’m ready for the sun
  10. Renewed our lease for one. more. year.
  11. Day 1 with Bambi, my personal trainer
  12. Planning projects to keep my sanity for one more year in 816
  13. A record 3 hour phone call between Josh and Richard

Ikea Desk-Side Organiztion

Good morning gang! Happy Tuesday. Who’s ready to return to the regularly scheduled programming around here?! I know I am. March was such a crazy month so I’m glad to be getting a fresh start today. Let’s hop in!

I’m just going to go ahead and assume that everyone is like this (to make myself feel better), but my workspace is often a disaster zone. Papers strewn everywhere, “in progress” crafts cluttering up the coffee table… I can openly admit, when I’m in a blogging frenzy, the living room turns into a mad house. What I really needed was a desk-side companion to help me contain the crazy and I found the perfect thing.Ikea Raskog Desk Cart

I feel like I’ve been seeing this Ikea Raskog cart everywhere lately! When I saw it in the catalog a few months ago, I knew it’d be perfect. It is exactly the height of my desk, easy to transport, and it looks dang cute too. It definitely holds it’s own against my hot pink desk.

Plus, with three separate shelves, it’s easy to keep organized. Up on top, I keep my favorite books, my iPad, and “In Progress” paper items that still need attention. Ikea Raskog Desk Cart

On the second shelf, I keep my camera bag and label maker. I don’t think I’ve even mentioned yet that I bought a DSLR camera! That was before Christmas! Phew, I’m off my game. I just enrolled in the Shoot Fly Shoot camera course so, I’m finally learning how to use it properly. Working on getting one more thing crossed off the ol’ Life List.Ikea Raskog Desk Cart

On the bottom shelf I keep current projects. Right now, it’s a bunch of washed and ironed fabric ready to be made into pillow cases. It’s on the to-do list!
